Cucumber & Dill finger sandwiches

Ingredients:

Bread of your choice (one in which you can cut the crusts)
Cream cheese
Dill
Black Pepper
Cucumber - I prefer English or Hot House


If you're making these ahead of time, you'll want to cut your cucumbers and strain them with a paper towel between the cucumber and strainer. You'll also need to change out the paper towel every so often.

You can shave off cucumber with a potato peeler (going back & forth) or cut off slices in your desired thickness. Place cucumbers on dry paper towel (some folks salt the slices to bring the water out faster).

Spread cream cheese over both slices of bread. Sprinkle with black pepper and dill (to taste). Add cucumbers. Slice of crusts off, then slice sandwich into quarters. If not serving immediately, place sandwiches on moist (but wrung out) paper towel and also cover with another moist paper towel.

Fresh dill is best, but if you use dried dill, use a little less.

Serve with your favorite iced tea.

I make these. My husband and I LOVE them.
I prefer the seedless cucumbers :)
